Does the USB-TC01 support K-type thermocouples?

Yes. It supports J, K, T, E, N, R, S, and B thermocouples.

Can I build custom logging software?

Yes. NI documents custom application development using LabVIEW and NI-DAQmx. Confirm support for your selected software and operating-system versions.

Is the CJC accuracy the complete temperature measurement accuracy?

No. Overall error also depends on thermocouple type, measured temperature, sensor accuracy, and cold-junction conditions. Consult NI's type-specific error graphs.
