Which module accepts the SCXI-1321?

The SCXI-1121, revision C or later.

Can it connect RTDs and thermistors?

Yes, with appropriate excitation configuration. Disable the relevant nulling circuit when using current excitation; follow the installation guide.

Are the shunt switches independently controlled?

No. The channel circuits are independent, but their shunt switches are controlled together in software.
